Soft and Chewy Crinkles

I know! It shouldn’t actually be soft but we like it like this better :D But when I tried to make another set after a few months, it was hard as how crinkles should be.  I think it got something to do with my oven setting.  We were having problem with our gas the first time I tried making one.  So I guess that was the reason for the softness and chewiness of my first attempt to make crinkles. It looks more like a soft chocolate cookie :D

Crinkles

ingredients
1/2 cup unsweetened cocoa powder
1 cups white sugar
1/4 cup vegetable oil
2 eggs
1 teaspoons vanilla extract
1 cups all-purpose flour
1 teaspoons baking powder
1/4 teaspoon salt
1/4 cup confectioners’ sugar

directions
a. mix together cocoa, white sugar, and vegetable oil
b. beat in eggs one at a time, then stir in the vanilla
c. combine the flour, baking powder, and salt; stir into the cocoa mixture
d. cover dough, and chill for at least 4 hours (this will help you roll dough into balls, less sticky in the hands)
e. preheat oven to 350 degrees F (175 degrees C)
f. roll dough into balls and coat each ball in confectioners’ sugar
g. bake in preheated oven for 10 to 12 minutes
h. let stand on the cookie sheet for a minute before transferring to wire racks to cool
